friends very good evening very good good evening to all of you yes welcome all of you on behalf of adco i'm dr president i welcome you on on the webinar on nutritional biosecurity friends today we are celebrating the 25th anniversary of golden day but this reminds me the last or last to last year's day remember the panicky the the rumors that was spreading for social media media everybody was trying to correlate that was the actual stimulus we being in addiso we try to speak science we try to explore the science we try to find out the solutions or deliver our solutions through science and that was the point where we were looking at the perfect opportunity where we can bring the critical technocrats to uh explore the scientific facts and i believe today it's the right occasion where uh speakers like uh dr davis who happens to be a food safety consultant can explore the actual golden elements what are there break this mix against him and believe me at the end of the session all viewers will be very very confident to believe that eggs are the right nutritional tool uh and to bring in front as a solution to implement nutritional biosecurity just before beginning of the session i i propose two guidelines one is that all the viewers are by default they are unmute and second being said that you are new we would like you to be little interactive through your doubts or your questions which you can post in chat box and they will be addressed by our experts at the end of the second session so i will start uh the first short session with dr david lecture and to begin with consulting for india's largest poultry breeding company bankies from last more than eight years she is also consulted to punish recognized food manufacturers like cheetah bantu mithai balay and kaka she completed such more than 15 consultancy projects successfully dr devasti is also a visiting faculty for smdt college and modern college in poland she has published many research papers in journals like global bioscience which are a good international appeal she qualified state eligibility test that is sat and she is a certified auditor of iso 22000 fssc 22000 and brc let's welcome and listen to her on today's topic golden elements of egg okay so can i share those my ppt okay so is it visible yeah you are visible yes okay um so hello everyone and i'm really grateful to dr prasad sir and ajit sir uh for giving me this opportunity so i'll just start um by greeting everyone that happy holiday uh this is our 25th year of celebration and this is i'm really happy to have this opportunity to discuss few things about what egg is and how we can incorporate egg in our diet um now when this presentation is basically divided into three parts um first we'll talk about some nutritional information now when we talk about egg uh we first imagine a lot of recipes like maybe omelette burji powder boiled eggs and so many things but uh very few people are actually incorporating eggs on a daily basis uh reason could be so now first we'll move on to the nutritional facts that um when we say egg mostly uh common perspective about egg is that uh egg white contains protein and egg yolk contains fat now technically um this is not the right perspective what we can we can say now when uh and because of this many people are not consuming egg yolk on regular basis like because of lot of news a lot of uh like media coverage also regarding egg yolk that it contains fat or people say that it contains cholesterol so we should not consume this but technically when we say nutritional value of egg we can see this this is the real nutrient content in egg not only it is limited to fat and protein but it is limited uh it is not actually limited to these two major nutrients it contains almost 14 micronutrients and macronutrients including out of 30 nutrients so it is we can consider this as a powerhouse that uh if you can read out the names you can see all fat soluble vitamins are there in this then from b complex vitamins also we have uh three four com b complex vitamins which uh in india right now we've uh we observe a lot of deficiencies are there in uh common population so to avoid that uh how we can incorporate this eggs that we can see now this is the nutritional value now um if we can go through this table uh the fourth column is regarding rda so everyone is aware about what is rda that is daily uh intake of nutrients or recommended dietary allowance so when we are talking about this um it from for a particular age group uh what kind of nutrients we should take on a daily basis what will be the amount it's all given so i've taken a common um young or adult group and i have added that values in this table so in just having 100 grams of egg or absorb approximately medium size two eggs we can get fat protein vitamin a d e k then uh we can have um b complex ramen like riboflavin cobalamin that is b12 uh if we talk about some uh micro minerals specifically so it is having a good source of selenium it is having choline which is important for various body functions and after consumption of these two nutrients we can try to um fulfill our requirements and the daily value column shows this now when we talk about nutrient uh basically everyone is aware that we require nutrients for our growth and most important is sustainable functions of our organ it's not only limited to a particular age group that okay now growth is done now work is done it's not like that each and every movement uh we are having lot of chemical reactions are taking place in our body and hence we need some kind of fuel or we can say nutrients for this and nowadays after this pandemic uh we are focusing more our attention on development of immune system and for this also various nutrients are required which are supplied through egg if we want to differentiate between nutrients we have macro and micro as name suggested macronutrients are of protein carbohydrates fat which requires in comparatively more quantity and to differentiate that we can say that protein carbohydrate fat we will consume in grams and in micronutrients these are required in very small amounts so we can say we required in only milligrams or micro milligrams but though it is having such a small amount which is required but we need to supply this amount to our body on a daily basis otherwise deficiencies can develop when we talk about protein always the term comes that is quality protein now in uh quality protein um how we can say this the protein or the protein source is a good source of protein or not or it is complete protein or not so to identify this various amino acids are there in products or in raw material and out of which we can differentiate that we are essential amino acids and non-essential amino acids essential amino acids are not synthesized in our body hence we need to get supplied from our diet so food products which are rich in essential amino acid is considered as complete protein and if we list down the products first name will come that is egg egg contains all nine essential amino acids so we have nine essential amino acids listed and all these amino acids are present in egg and therefore it is called as complete protein or excellent source of protein when um we want to compare any product uh or the protein content of the product look for benchmark or for comparison always egg values are used so that we can identify it is having good quality protein or not and therefore we can say that egg is a king of protein all essential amino acids are there the biological value of protein is 96 percent that was i was saying that it we can compare with egg proteins to identify is it a good source or not the other products if we are consuming eggs on a daily basis we can get almost 25 percent of daily requirements of protein and hence we should incorporate egg in our daily diets not just because uh there is no other option but we should keep this as the best source of protein and comparatively cheapest source of protein now uh when we are talking about protein and immune system protein is going to play important role in development of immune system and this is just a slide to give a slight information about this so uh at the bottom there are three names or these are the components that is lymphocytes um psychosis cytokines phytocytes these are all important for uh immunity system and for this the base is made up or these components are made up of protein so if you are lacking in protein maybe there will be less white blood cells which will uh give this immune system a booster then phagocytes are actually killing bacteria or virus which are coming in contact uh and we need to identify um this is the requirement so we should provide proteins for this now uh when we say a variety of nutrients and now we have discussed about protein when we talk about minerals and other vitamins so we can say that egg is a powerhouse of um micronutrients so vitamin a d e k even uh k and uh vitamin k and d these two vitamins are comparatively we can say there are very rare food products which are raw material which is a source of these two vitamins and egg is one of this so vitamin d is there in egg vitamin k is there and vitamin k is required for coagulation of blood so after injury if there is excess blood loss so we can say that if we have good amount of vitamin k blood clotting will takes place and there will be uh excess blood loss will be stopped then b12 b5 that is pantothenic acid it is important for hair and skin it is required for hemoglobin development it is important for immunity and wound healing when we are talking about c that is pyridoxine sorry vitamin b6 peridoxane it is important for red blood cells production so and it is going to play important role in neurotransmitters or development of homoglobin uh molecules in our blood calcium as uh known it is we will require this for bone and tea development iron is the important or inherent part of this hemoglobin even this is supplied through egg not in large amount but moderate amount is there it is important for brain development and thyroid some hidden treasure or we can see some magical nutrients which are there in eggs are like b12 that is biotin nowadays lot of ads are there biotin gums are developed so that we can get good hair and skin so this is kind of a supplement so instead of that this is i'm not saying instead of that but egg is a good source of biotin so if we are eating egg on a regular basis we'll get this protein this vitamin and uh our hair and skin will glow in case of b12 currently lot of deficiencies observed among common indian population uh so if we are consuming egg eighty percent of daily requirement will be fulfilled now choline is um it's not considered as vitamin or mineral but it is having some characteristics like fat so water soluble b complex vitamin so it is important nutrient uh which is required for brain function liver function and it is helping in neuro transmission work as well this is the richest source so egg is the richest source of choline and that's why we are going to get good amount of this nutrient and it is going to help in brain development uh choline is considered as a pregnant lady friend because uh for infant development or overall uh baby development uh this cooling will play important role and then when we talk about selenium this is a micro mineral which is required for um immunity or it works in immunity system or to improve the immunity and it is important for thyroid function so let's talk about more about selenium so these are a few images actually what is the function of biotin it is given in the picture format b12 is also important for dna formation and in the middle of image you can see that choline is considered as mom's best friend it is also having good role in elderly people so that during their aging or during their body functions are going to get affected little bit so this nutrient will help them to you know grow properly or it will maintain their body functions properly now when we talk about selenium it is acting as a um immunity booster by playing with role of antioxidant now when we say antioxidant a small image is there which will explain that so during various chemical reactions taking place in our body a lot of by-products are generated so free radical is one of the one of the by-product if it is in within the limit it's there is no harm but if it is exceeding the limit it can uh cause some health issues like maybe heart disease there is some chances of cancer development or even in alzheimer's disease also it can have some effect so overall number of free radicals uh if increasing then our body will not have regular function so when antioxidant comes in picture it will just inactivate this free radical by attaching that molecule and because of this oxidative stress is reduced and hence the chances of heart disease uh cancer everything we can try to control these uh situations so antioxidant is really very important and we are eating various fruits vegetables it's always considered that um fruits vegetables are the best source of antioxidant but even egg is having this selenium which is going to give you this effect now antioxidant is not only require like uh going to reduce this heart disease um things but it is important for kidney function for everywhere where this byproduct is generating to control that count we need selenium or antioxidant now there is a relation between selenium and protein selenium in our body uh it's present in the form of selenium protein 15 cylinder proteins are identified and overall selenium is distributed in livo kidney muscle and blood plasma selenium is present uh actually it is present naturally in soil and because of this some agricultural produce like plant uh like fruits and vegetables also have selenium content hasn't but in recent studies we have seen that sodium selenium deficient soil is observed in various places and because of this uptake of selenium implant is reducing the uptake percent is being reduced in day by day and so to avoid all these things or because of the scenario even we can say hence egg or chicken egg will help you to provide the selenium quantity which is required in our body through the diet now various studies uh you will get on the google or you can search on the net uh regarding uh immunity system selenium and its relation with covid um infection so um it it was observed that various studies shows that selenium deficiency is observed in population where resistance regarding microbial activity or virus is being reduced so if you are lacking in selenium maybe your body will not fight uh strongly against any infection it is um in the form of selenoprotein it is going to help you to fight against a virus um one study was conducted in india which shows that recovery rate or recovered patient number of recovered per patient was more when the selenium value in that patient was comparatively higher than the others and even uh selenium content and mortality rate was also uh you know showed that if you are having good amount of selenium you can fight this circuit virus and you come back from that situation so that's why immunity system development or immunity system in our body is required uh selenium and other nutrients now this we were talking about nutrient content now uh how we can consume egg or consumption of egg uh various myths will be like doctor uh ajitsaur will discuss a lot of myths but i will discuss one myth regarding egg like eating egg throughout the year is correct or not so a lot of people say only we should eat egg during winters not in other season because it may give you more energy or more kilo calories so it can lead to weight gain or something but it is not uh correct ah when we are talking about nutritional information and rda that is recommended dietary allowance uh there is no specific requirements given as per season so nutrients whatever uh given we required on a daily basis so it's not about uh how how we are going to consume in winter or in rainy season it's going to be the same only caloric value or calories which are required for overall body function that changes in summers um sorry in winters we required more kilo calories to reduce to maintain our body temperature so there are very studies are there and which which says that if uh the surrounding temperature is around 33 degrees celsius or around new uh temperature uh it is important to ensure um how much quantity of kilo calories are required so energy is the thing where we need to concentrate um if we are talking about economical uh source of um [Music] sorry just a minute huh when we are talking about economical uh part chicken uh and egg basically egg if you can compare this table you can see that it is having comparatively a cheaper source and at very less price you we can approximate around six rupees uh egg is there so around 10 to 15 rupees will get two eggs which is going to give you good amount of things then uh one more point is there in this like how we can incorporate egg in the diet so give importance to egg do not reduce egg like do not take egg as like whenever i don't have any option that time only i will prepare egg recipe so try to incorporate eggs in a diet at least two eggs in our daily basis you can start that way purchasing of egg you can increase so that you can you know frequency of purchasing uh if we are increasing definitely we will consume more eggs and to ensure safety we should cook all the egg products fully so that there will be no point of contamination if this is a very small part that egg though we are talking about nutritional value but egg is having lot of commercial points where in bakery industry in in food industry it is playing important role for as a foaming agent binding agent and all these characteristics are because of fat and protein which is there in the egg and so we are having wide scope and requirement in food industry as well only thing is we need to check for uh microbial activity in egg so to ensure safety as we need to uh ensure that eggs are not cooked properly so that there will be no salmonella contamination or it will not affect a human body directly so for eggs we need to check quality and safety both the points and then it is an excellent uh source for nutrients and as well as it is uh giving various to idle over by vital role or it's going to play vital role in industry [Music] this is the last slide what i can see so uh what uh what is important thing is like when we are talking about egg do not uh just restrict yourself for once in a week or once in a month consumption we should eat egg on a daily basis so it will ensure nutritional security and we can fight against and i said probably if you are from india nobody needs his introduction but but still as a critical technocrat i will take this privilege to run his introduction video before this session my second dean knpcbs at chirivar dr ajit ranade holds first class with distinction masters and phd degrees in poultry science from bombay veterinary college mumbai he has completed 12 advanced courses and trainings in portrait science he carries a bright aura being a technical expert an administrative leader a natural poet an enthusiastic singer classical music devotee a cricket fan and a superior orator are other notable facets of his personality dr ajit ranade out of his expertise is supporting various committees the member of world veterinary party association india member of mafsu academic council the chairman of board studies in poultry science the technical advisor to klafma india committee member and technical advisor vetsin colchi technical advisor for scientific committee of knowledge day of poetry india and many more he has more than 60 publications in the peer-reviewed journals and presented in more than 80 conferences and seminars he authored or co-authored the 160 colleges orphanages in the poultry industry and in scientists needs since 2010 he has been an active contributor for the industry during the bird flu outbreak in 2006. his scientific video talks in to the audience the organization this this thing is enough to indicate the importance and other aspects of egg but as prasad wanted me to speak about the myths and he has given a beautiful name and the title to the to the dog as well let's go by go one by one i can see uh mr suresh raider joining welcome sir uh let us start with the presentation let me start sharing the screen welcome sir welcome namaste okay okay this way all right is it visible properly yes sir great so the topic given to me is the egg certitude in short in simple words it's you know to remove the myths about the egg and let me begin by saying that all myths start from poultry farming and poultry products in our country no matter whatever happens wherever it happens in the world in some corner of china or some kind of corner of chile or peru let anything happen anywhere somehow or the other i don't know the reason but everything culminates down to the poultry sector in our country and the sector is badly affected i really want to do a second phd on this why this is happening but anyway this is something that's happening and the chicken meat and eggs are blamed every now and then and then we all have to gear up go to the press club arrange the breast media interviews and try to remove all these misconceptions from the minds of the people in fact as diversity right now said these are the best sources of good quality proteins and other important nutrients for human beings in fact thank you prasad for organizing diversity's lecture before me so majority of the portion which i was to cover she has already covered and so i will skip or rather run through those slides little faster as we all know layer farming or portrait farming what it needs it basically needs these five things birds with good genetic potential balanced diet desirable environment a good management and disease prevention it's not a rocket science it needs dedication it needs a person a farmer a manager he needs to apply himself to the to the birds or to the to the poultry sector and then he he will come back or he will know what exactly the word wants as dr bibi now used to say you talk to the word the word will talk back to you and really the person who can understand the language of the words is a very good manager and that's exactly what we need and when we do that we get good quality eggs and good quality protein in the form of poultry meat from the birds some of the myths which i am i'm going to address now the first is what came first chickens or egg a lot of debate is there but do you know that scientists finally concluded that the chicken came before the egg because the protein which makes actions is only produced by hens moreover as you know the egg is a reproductive part or once the bird gets matured when it thinks or starts reproduction the egg is produced so basically the bird has to be there existing and then only the egg will come so finally is the is the chicken that came first and then the eggs now there are different types of eggs that are in the market and there are some misconceptions and some myths about the different types of eggs also first is of course the standard white deck these are unfertile eggs and these eggs come from white hens that are typically raised in conventional housing systems when i say conventional housing systems in india we have cage system of housing preferably a california system of housing or battery cages or nowadays we also have furnished cages so these are the infertile eggs produced by a bird from a breed called as white legal second is the standard brown egg in india the brown eggs can be fertile or infertile depending on the origin there are certain strains of the words which lay brown shelled eggs and they could be infertile but there are certain brown eggs which are layered by the backyard birds which could be fertile as well so it all depends on the source from where the eggs have come these eggs come from brown hence and are typically raised in conventional housing systems but nutritionally they are nutritionally they are not different than the white eggs many people have got this concept in their mind that the brown shared eggs are better as far as nutritional quality is concerned but no that's not the case third is the furnished or enriched or nest laid eggs these eggs come from the hens that are raised in furnished housing systems these furnished housing systems are very popular in in in europe nowadays it has also started you know in india we can find some farmers which have the enriched enriched enriched cages are enriched nests furnished housing provides more space both floor space and height for the birds so that the birds can move around while also providing a variety of enrichments in fact we have carried out lot of experiments in mumbai as well as at nagpur and we have published the data also about the comparison of the birds that are raised in furnished houses or furnished cages against the traditional cages then we have another variety of eggs which are called as free run x these eggs come from the hens that are raised in free run or what we call it as a barn or aviary type of housing system free run systems allow the hens to roam freely within an enclosed barn while also providing a variety of enrichments such as nesting boxes and purchase then we have typical free range eggs nowadays if you visit a mall or or a supermarket you get variety of boxes packed with eggs and a lot of fancy things will be written on that some of the boxes will have free range eggs they come from the hens they are raised in a aviary or a barn type of housing system and finally the desi eggs in india the local crossbred backyard population of chicken is referred as country chicken and their eggs are referred as desi eggs and typically these desi eggs are sold at a higher price although the size is small they are brown in color they are tinted and people are crazy because they feel that the nutritional content of these they see exists better but scientifically the nutritionally there are no differences between the nutritional content of a wide egg and the ac but they could be infertile as well as they could be fertile depending on the source from where they have been obtained now composition of eggs diversity has reduced my burden of you know sharing lot of information about the nutrients hurriedly we can go through that calories of course three percent of the average requirement of adult man is provided by the egg four percent of average requirement of adult woman is provided by the egg and it's a dense food with respect to nutrients cholesterol they actually refer to it it's the essential nutrient from you for human body all these young generations they they avoid cholesterol they avoid intake of cholesterol they are not correct cholesterol is essential nutrient for the human body it's essential for function of all the cells in the body it helps in maintaining flexibility and permeability of cell membrane and it is essential for production of sex hormones cortisols and vitamin d and bile i remember quotes of some of our great leaders great teachers like rama subba reddy or dr deva gowda always they try to explain the importance of cholesterol and why the consumption of eggs should be continued as the v as as the age advances because that is needed for production of sex hormones and other important hormones as well then the salts lecithin involved in general lipid transport in blood and metabolism of cholesterol then we have proteins they've actually mentioned about it a very high biological value the proteins which the eggs has has got 97 by bioavailability it is considered as what can i say a reference protein and all the essential amino acids which they actually mentioned needed by the human body are present in the proteins from the eggs then vitamin a vitamin d vitamin e vitamin b12 b6 b1 you name it and it is there in the egg except vitamin c i repeat except vitamin c all vitamins are present in abundance in the eggs themselves then as far as the other vitamins are concerned folate riboflavin iron choline which they actually mentioned are present in the egg and now the minerals selenium and zinc selenium is one of the very very important antioxidant which protects against the oxidative damage to the body and this selenium can be enriched or the eggs can be enriched by using the selenium we are going to talk about it little later it has been hypothesized that the the selenium prevents certain degenerative diseases in human body including cancer and cardiovascular diseases it's a golden element that acts as a immunity booster selenium and rich eggs are specially produced and are recommended for good resistance and faster recovery of humans from viral infections this is very important ekrc the product which we use in in poultry and there are a lot of products available in in human market also which contains selenium vitamin c etc then the zinc it's essential for growth essential for sexual maturation involved in enzyme activity and wound healing and helps in fighting the infections so in other words as as devastating mentioned egg is a pack it's a bomb it's a full packed source of nutrients and one should never avoid it because as you compare or if you compare the negatives and positives of the egg it has got many more positives as compared to the negatives which are very very few and marginal now the designer x now there is a concept of designer eggs in fact all eggs where in the nutritional modification has been done in the diet of the breeders those breeders will produce the egg and whatever changes whatever interventions whatever modifications you do in the diet of the breeders those will be seen in the eggs produced by those birds and therefore manipulation of any nutrient any nutrient in the diet of the breeders or the hence lead to production of disaster x like for example immunomodulation manipulation of fatty acid contained mineral enrichment reduction in cholesterol antioxidant enrichment herbal enrichment pigment enrichment vitamin e enrichment and then we have selenium enrichment as well so all these things can be done and you can also think of using genetic engineering which is of course not used in our country for preparing the designer x now what our how how these designs are exactly what are the differences if you look at this particular table just give me a second yeah if you see this particular table there are three nutrients which have been listed one is the selenium second is vitamin e and third is omega-3 fatty acids normal egg will contain about 0.5 micrograms of selenium whereas we can enrich that particular egg and convert it into a designer egg by increasing the level of selenium to 30 micrograms vitamin e normal egg will have 1.62 milligrams of vitamin e in its yogurt which can be raised up to about 5.58 milligrams and omega-3 fatty acids which is normally about 37 milligrams it can be increased to about 125 to 350 milligrams depending on the diet which we give so these are the designer eggs and this is something which is you know very important which we we must understand when we buy the eggs next is the organic x these eggs come from the hens that are raised in a free range housing system the hens are only provided with feed that has been certified organic which means that it only contains ingredients that were grown without pesticides herbicides and commercial fertilizers and when you buy these organic eggs look for the certified organic symbol on the egg carton friends nowadays we get a lot of organic eggs in the in the supermarkets and malls in mumbai as well i don't want to comment more on that they are expensive but nutritionally they are no much different than the normal eggs you have some other benefits definitely yes as i have mentioned over here but nutritionally they are not very different so there may be many other reasons but if you wish you can pay more for organic eggs as well then omega-3 fatty acid in these tax these eggs come from the hens that are provided with feed containing extra flax seed which could be raised right up to 10 to 20 percent and as a result the eggs laid by these hens contain more omega-3 fatty acids same is the case with vitamins that should be vitamin e or d these eggs come from hence that were provided feed which was nutritionally enhanced to include higher levels of certain vitamins like d or e and as a result the eggs laid by these hens they contain corresponding higher amounts of particular vitamins then selenium in these tanks these eggs come from the hence they were provided feed that was nutritionally enhanced to include higher levels of selenium and processed eggs we can process certain eggs we can convert eggs into liquid eggs or frozen eggs or egg powder or dried egg products which we which we can produce from the eggs after breaking them and they can be pasteurized and preserved and they can be processed and done further sold so in short eggs cannot can can be available in various forms from various types of birds in various categories like designer eggs all of them can be used for human beings now it's 14 minutes and 52 seconds and half of the time is already over and now i start with the topic which has been actually allotted to me is about the myths about the chickens and eggs and what is the fact there is a there's a program which comes on tv virus satya there are a lot of whatsapp videos that are circulating on the whatsapp medias throughout the day and in the evening some of the channels they you know actually show what is the video that has been circulated and what is the truth so here here we are going to do something like that whatever are the myths that are being circulated on whatsapp and other social medias i am going to talk about them what is the scientific fact first thing chickens are genetically modified the scientific fact is genetic engineer engineering involves making artificial changes to the genetic makeup of organism in order to optimize a trait chickens are not genetically engineered or modified they are selectively bred for positive traits as a policy genetically modified products are not permitted in our country whatever growth and development we see in chicken production when i was a student we used to get a body weight of 1.4 kilos by from a broiler in the span of eight weeks now i am getting 1.5 kilos body weight in a span of four weeks now this difference you know the time period has reduced to 50 is not by genetically modified chicken or not by injecting hormones it's just because of the selective breeding selectively bred birds are used we decided who would be the parents of the next generation and we went on selecting went on selecting lot of good breeders are there in our country lot of names could be taken and because of their efforts the word has improved its productivity so friends remove this concept from your mind genetics has not i mean the genetics has been improved not by modifying it artificially but by means of selection the second is eggs are vegetarian or non-vegetarian oh my god this particular myth i don't know how many times and to how many people i have spoken about it the eggs that are produced by the hens as a normal physiological process of the birds without any external influence is a vegetarian egg it's a infertile egg layer farms nowadays do not rear any male birds and without which there is no possibility of producing fertile or hatchable eggs the table eggs that are available in india are infertile or non-fertile and they do not carry any life in it or in them because the birds are not matted and therefore please remember that the table eggs that are available or sold in the market are the infertile eggs ignorant to the fact that hashable eggs are different from the table eggs produced in their farms table eggs are considered as non-vegetarian origin but no it's not a fact i would add a little bit prasad that the fertile eggs also unless they are incubated for a period of three to four days till the blood vessel starts developing it's there is no harm in consuming those exact infertile eggs but once you keep the exponentiation and after about three to four days once the you know blood vessels develop then of course you cannot consume it so that's the fact about the vegetarian or a non-vegetarian egg and it's it's written over here yes sir somebody's microphone is on okay so uh mahatma gandhi has also said that the egg is a vegetarian food if you can take milk you can take eggs as well now hormones used in egg production i have spoken about it in the first myth as well no we are not using any hormones the scientific fact is that the white legend is a breed of choice which belong to the which belongs to the mediterranean class and that's the breed which is used for egg production selective breeding is carried out present day layer strains produce 325 through 330 eggs in a year and that's just by selective breeding not at all by hormones however no hormones are used in their industry to produce eggs basically it's not affordable basically it's not needed the hormones that are required fsh and lh follicular stimulating hormone and luteinizing hormone the cycle at which these two hormones are produced in the body of the egg and the play of these hormones is well decided we need not intervene at all and the words just keep on producing the eggs certain traits like broodiness and other things molting etc have been removed by by selective breeding and that's the reason why we get more number of eggs from the word without using any genetic engineering or without using any hormones then chicken eggs contain antibiotic residues and it causes resistance again antibiotics when used in humans scientific fact is that certain types of approved antibiotics are used in chicken but mainly they are used as treatment or curative antibiotics against the fatal diseases in chicken only the antibiotics that are not significantly valuable in human medicine and are not absorbed by the gut are approved for use in chicken feeding that too nowadays has been reduced i don't remember producing a feed for birds in my farm for last 10 years which wherein i've used the antibiotics so the use of antibiotics wherever it is done is actually practically stopped for seven to ten days before slaughter of the world or once the disease is controlled then the eggs are not sold from the birds which have been fed with antibiotics so don't worry about the antibiotics and the resistance causing out of that then the next is the eating eggs raises the cholesterol level diversity has spoken about it but let me tell you dietary cholesterol has little to do with the amount of cholesterol in the body there is a feedback mechanism the egg contains relatively small amounts of cholesterol may be about 180 to 220 milligrams whereas the body needs about 1000 grams my body needs about 1000 grams of cholesterol now i am consuming one egg only 180 milligrams is being consumed if i consume 3x it's 360 likewise then whatever other sources of cholesterol which i'll consume in my daily diet my cholesterol quota will get will get fulfilled if it doesn't get fulfilled if i consume say for example if 600 milligrams of cholesterol the body sends the signal signal to the liver and remaining 400 milligrams of cholesterol the body the liver will synthesize and so as long as this particular mechanism feedback mechanism of how much cholesterol is being consumed by a human being in a particular day and how much is a deficit as long as that signal goes to the liver you are safe your blood value or blood cholesterol will have nothing to do with the dietary cholesterol if this particular feedback is disturbed then of course you have to be a little bit careful so as the age advances maybe if you have a sedentary life you are having a lot of bad habits or not doing any good exercise you are taking alcohol too much you are smoking all these things you know we will disturb that particular feedback and then there'll be a problem but if you are having a healthy lifestyle don't worry about cholesterol at all and the cholesterol as i mentioned earlier is one of the very important mutant for humans as well those who take a diet absolutely without cholesterol they have problems you know the epilepsy the neuromuscular coordination will be disturbed and all those things will start so don't worry friends consume eggs safely then all saturated fats raise the blood cholesterol one large egg contains only about 1.5 grams of saturated fat but it is rich source of 13 vitamins and minerals stearic acid a type of saturated fat found naturally in poultry products does not raise the harmful ldl full soil but boost the beneficial hdl cholesterol levels lot can be spoken about cholesterol one entire seminar will have to be dedicated for that but in nutshell i am sharing this with you don't worry as long as you don't have a sedentary lifestyle and you don't have that feedback disturbed don't worry about consuming the cholesterol and nowadays what i find after this particular great 19 pandemic people have become very much aware morning walks and other things have started and a lot of people those who are not taking eggs they have started taking eggs so on and so forth then the organic eggs are more nutritious than conventional no there may be many good reasons to choose the organic eggs but nutrition is not one of them no significant nutritional difference exists between the conventional and organic crops and livestock so those who want to believe in science there is no nutritional difference but there are other advantages you can always go and buy the organic stuff by paying higher price if you wish to nutrition is not the reason then this is something which happened in india plastic eggs plastic eggs and they are circulating in the market there are no plastic eggs in the market the shell membranes of the eggs which is of normal portion is being claimed to be made of plastic which is not the case it is difficult to mimic all egg structures artificially and may not be commercially viable as of now in fact this plastic thing had created such a behavior that we had to conduct a press conference in pune and then we also called the experts from the laboratory where those eggs were checked and we demonstrated how that particular shell membrane looks like a plastic and i showed them by burning that shell membrane burning the plastic and that particular thing was cleared from the minds of the people including the reporters and somehow or the other that thing has now stopped but remember there's nothing like plastic eggs no problems about it don't worry about it then consumption of poultry meat or eggs can lead to ovid dieting infection in humans i remember it was the month of march 2020 and first i attended a press conference at press club in in mumbai uh opposite vetting station and i addressed this issue at that time the kovit 19 was not not even entered india or not even in the nearby city vicinity of india but the rumors came by the consumption and the portrait condition is bad because the covenant ending is spreading absolutely wrong absolutely wrong and it's not just we are saying because we are part and parcel of this particular science but the coronaviruses have got four groups and depending on genetic and antigenic characteristics they are alpha beta gamma and delta alpha and beta they affect humans whereas gamma affects avn group so the group of coronaviruses antigenically is different the one which affects chickens or the avian group and one that affects the humans alpha and beta affects humans gamma affects the avian group the host cell receptors are different in kovid 19 cases it uses a stew and ibv that is the coronary infection in in chickens that affects the chickens uses cilic acid chickens or any other bird does not get infected with code 19 and there is no report of the disease getting transmitted due to them don't worry about it eat chicken and eggs nothing is going to spread through that because our cooking methods are once again and again and again and again keep on repeating that our forefathers has have gifted us the methods of cooking which we use of hard boiling everything and nothing will survive in a well properly cooked meat on chicken moreover this doesn't get transmitted through words at all so 27 minutes and 12 seconds and i am through with my presentation before i conclude friends if we always say just a moment let me let me get out of this uh how to get out of this i don't know let me check i can just close it i don't know yeah you you click click on the presentation [Music] yeah so 27 minutes and 50 seconds i have about two minutes to go uh why i'm here and what i'm trying to tell you is that you know see we all have been telling about the good aspects of egg and i will tell you my experience when i was suffering from povet it was september last i got the disease on 5th of september and it lasted till 17th of september now we don't cook meat at home normally yeah some once in a blue moon i i do that but believe me i have been eating two eggs every day from 5th of november till 17th of september to 17th of september till me and my wife were completely out of it and i really trust and i believe that the eggs have helped us to to maintain the immunity and come out of it today the first webinar was organized in mumbai veterinary college and i shared the same thing with all the experts who were present dr mahesh was the speaker and our vice chancellor our director of research extension to them i just shared the same thing that this particular little egg the incredible little egg has saved us and that's the reason why we are surviving and that's the reason we are in the position to you know arrange this particular today on the 25th world day same thing you have done dr prasad and all the group of adizio thank you so much for giving me an opportunity to share my thoughts about the myths that are circulating about the committee mr suresh raider over here uh in our session for his concluding remarks to just please allow me run a video that will introduce him right we have mr suresh chittori raidu with us today chairman international commission uk mr suresh is a known phrase in indian poultry industry he is an engineer from the faculty of computer science he has done his masters in business administration from the imori university usa mr suresh has completed the president's program in leadership from the harvard business school usa mr suresh raider has visualized polar farming business as a vehicle for the transformation that can eliminate nutritional deficiencies of women and children in india his work has been recognized at global level in 2017 when he was appointed as a vice chairman of international head commission uk later in 2019 he became the first asian president of international act commission he also happens to be the counselor for the international commission foundation has played a vital role to make the states of telangana and andhra pradesh a leader in ease of doing business he is the former chairman of confederation of indian industry and ap state council he is also board of director for hammer raj batteries he is vice president of all india poultry buddhist association as well mr suresh raghu has used his passion and skills of photography for raising the awareness and funding for the wildlife conservation and now let's listen to his remarks today as the president of international act commission thank you thank you very much dr ajit always thank you for your support for the industry uh and of course not only through your messages but also through the people you develop for the industry uh so really really grateful for you and to the bombay veterinary college for the human service thank you uh dr davishree i heard a message in the end but i think that was enough to know what you were saying and yeah i mean somebody who's discovered health and discovered enjoying health in the last two and a half years losing a lot of weight but not stopped eating you know and eggs have played a critical role in that and he was saying doctor you know i think i eat five eggs a day almost a couple weeks uh my triglycerides used to be always 200 plus they are 60 now and in spite of saturated fat and all that they tell me now i it's everything is fried in ghee and of course i my carb my carb input is very low now sugar and carbs i have not given up on them but i've cut down big time and uh and i think that's the criticality of it right eggs are almost uh then we have to be careful to not make all or nothing statements uh nothing is as simple as that there's nothing like you can't eat 40 eggs a day and say i won't eat anything else i don't know if anybody has tried that but i don't think it is smart so and i think even like i think two eggs per day for everyone is absolutely safe i would say 98 percent it is safe there is always you know human bodies are complex they are not simple that one rule applies for everyone but like you know discovering the dietary cholesterol almost doesn't matter you know and then to discover that your body no matter what makes a certain amount of cholesterol and i think uh that would mean that you have to eat 15 whole eggs a day or something like that i think if you really have to make up for what your body makes um so i don't think i recommend anybody to eat that much i mean my son eats a lot of eggs but not all of them are whole eggs you know eats about four or five and remaining 15 are for egg whites but we know how critical that is uh so doctors i think three years back when iec was happening in osaka the japanese guy and the chinese industry guys made a comment an interesting comment where they said you know if you want to see the relationship why don't you go check the relationship between our consumption and our olympic medals i said hmm seriously then you know we may actually be ready to check that and it's it's quite uncanny to see how uh you know the olympic medals went up i mean today of course i made it uh showed that slide to the department in the afternoon when the department's presentation was going on they're talking about that and then and every eight or more creates 35 000 jobs you know every per capita increase in india creates 35 000 jobs so again that's a great this thing and then you know today the new thing that you need to worry about is sustainability environment and eggs again are one of the lowest impact environmentally foods [Music] you see we have taken on again to get to net zero by 2050 uh and and through again productivity gains and also through managing uh maybe looking for alternate proteins i myself have invested in a single cell protein company where we're making the protein out of methane uh you know waste methane so so that is one thing we have also built a biogas facility where now we can run buses with that and of course kitchens we can replace cooking oil lpg and cng through litter you know the gas generated from bitter so we built two of them now we're looking at building more uh so through that you know we're also taking care of our litter problem um i think uh so my my thinking has always been doctors up is uh is that when there is a problem make it a business opportunity then it is solid you know if you if you keep talking about you know you have to do good and all that nobody cares you make it a business opportunity then everybody grabs it uh so that's how i look at any problem is to see how can you make money off it and then you know it gets solved uh is how i look at it so with that uh prasad thank you for the opportunity and i think humongous opportunity in our country and then i think if over the next 30 40 years we get to eating two eggs a day that's a ten times growth so and also then we are talking of millions of jobs in rural areas and offers rural opportunities for people uh also one of the programs we are talking to government is how can we help small farmers of course my idea is never about giving subsidies it i don't think that should be the model it should be about enabling giving them the enabling facilities and infrastructure to help them uh you know and and sustain nothing and today with digitalization although many of those things that were not possible for my father and baby rao in 1980 when they started necc uh i was i remember my father no matter what you had to leave the room by 5am because because he would start talking to everybody around the country finding out how many trucks have gone from andhra to calcutta for to delhi from namakal to chennai and bangalore and all that you know so 5 a.m all the calls used to start so he was the national he was the coordinator in the national coordination committee so which he did for good 15 years i think and and that's how this but you know there was no internet there no whatsapp then we didn't have a proper std also uh no cell phones and so but now i think it's become much easier with digitalization and i think we need to take advantage of that so with that prasad anything in particular you want me to talk about or anybody has any question nothing specific sir i thought to hear you from the perspective of you being a chairperson of international language what we expect here in this market what awareness do you feel is principally important here i think see one thing is if you see um there's a progress the world has been doing i mean has been going through so we were studying you know uh like china is at 300 x per capita today uh right and uh so if you see there's a movement which i had actually done a small study for myself again not scientific with this thing looking at uh somebody was uh one economist was made was telling us when i was in cii you know he was telling us if you want to see how a country is doing how the basics you know fundamentals are doing he says forget about all this look at how egg consumption is going if it's growing then that means you're doing that you know i said i never knew this you know what [Music] it was a little different it was a little bit more or less but it was more or less same but from 2000 to 6000 the growth is like something so china the same thing happened that's what i showed today from 2000 to 6000 they went from something like 100 eggs two thousand to three hundred by the time they went to six hundred and that is what is going to happen to india in the next 20 years they say we will get 1000x per capita by 2040. so so according to me by 2035 we should hit the 250 plus consumption but again added to that is that today's knowledge what doctors have and what they wish you were saying about the importance of and today we had a webinar and we had two doctors and endocrinologist surgeon talking and they were also talking about how important things are for that so so so i think i think with this knowledge i have a feeling we'll go way beyond one a standard by 2040. so the opportunity is there of course it's for the industry to you know do its job we can't expect somebody else to do our job uh so i think we have to do that you know we still talk about the same song that was done by uh our way of so i think that's what the industry yeah yeah absolutely that's a really good message to is full of nutrition especially from the perspective of fighting viral infections like ovid recovering from that and as doctor diversity referred many times which is a very important element to have for the pregnant ladies so if you combine all these few factors and you know put it across on the social media probably it will take no time to jump up the car this consumption in india which is close
